White Tea (slightly fermented)

White tea are lightly fermented tea.  The leaves are silvery grey and the brew is of a light shimmering yellow.  As they undergo very light fermentation, white tea retain high level of catechins.  Thus, it contains  a greater number of anti-oxidants than other tea.  There are many kinds of white tea like Grade 1 - Superior Grade Shou Mei, White Peony Supreme, Super Fine White Peony and Silver Needle Pekoe. The best white tea contains a higher proportion of buds, which are covered with fine 'silvery' hairs.

White tea is also rich in vitamin C.  Recent research indicates white tea has the strongest potential of all teas for fighting cancer, especially colon cancer. Researchers speculate that the processing of tea determines its cancer fighting potential. Because white tea goes through the least amount of processing, it theoretically has the most polyphenols which have been linked to cancer prevention.  There is also considerably less caffeine in white tea than the other varieties (15mg per serving, compared to 40mg for black tea, and 20mg for green).

White Peony

This tea is grown in the high mountains of Fujian, China.  It is processed by rapid low temperature drying without any rolling and other processing.  This enables the tea leaves to retain its original characteristics. The liquor of this tea is a shimmering light gold colour with a smooth mellow taste.  This tea cools body heat and has powerful antioxidant properties. Its flavour is refreshing and sweet with a distinct floral fragrance. 

Brewing and severing

Generally 8 grams of tea per 600 ml of water or about 2 teaspoon of White tea per teapot should be used.   White tea should be prepared with 95°C and steeped 1 minute.
